Beetroot and Horseradish Soup. This vibrant soup brings together the earthy sweetness of beetroot with the spicy zest of horseradish, creating a harmonious blend of flavours that will tantalise your taste buds.

Ingredients

  • 700 g Raw beetroot (or substitute 500g cooked)

  • 1 Large onion (Diced)

  • 2 tsp Fennel seeds

  • 1 clove Garlic

  • 2 tsp Sherry vinegar

  • 1 tbsp Tomato puree

  • 300 ml Vegetable stock

  • 1 Juice of lemon

  • 2 tbsp Horseradish

  • Garnish Dill

  • Garnish Root vegetable crisps

  • 50 g Soft goats cheese

Directions

  • Trim the beetroot and wrap with foil.
  • Place into a pre-heated oven at 160°C for 40 minutes or until tender (this will depend on size).
  • Add the diced onion to a pan and cook over medium heat until they soften (about 5 minutes).
  • Add fennel, garlic and tomato puree and cook for a minute.
  • Add the stock
  • Once the beetroot is cooked, slice it and add to the stock.
  • Pour into blender and add the horseradish and lemon.
  • Blend at high speed until it is very smooth.
  • Either heat or chill as per your preference.
  • Pour into a bowl and add dill, Goat’s cheese and root vegetable crisps as garnish
  • Enjoy!
