Ingredients

  • 1 1 Large cucumber

  • 2 tsp 2 Salt

  • 1 clove 1 Garlic (crushed)

  • 1 tbsp 1 Gochujang

  • 1 tbsp 1 Honey

  • 1.5 tbsp 1.5 Rice vinegar

  • 0.5 tbsp 0.5 Sesame seeds

  • 1 tsp 1 Gochugaru

  • 1.5 tbsp 1.5 Light soy sauce

Directions

  • Cut cucmber into bite size chunks or slices.
  • Place in sieve and cover in the salt, mixing thouroughly.
  • Leave over a bowl for 15 min.
  • Rinse salt off cucumber.
  • Dry off the excess water from the cucumber using paper towels or a clean tea towel.
  • Mix all the remaining ingredients in a container with a lid, large enough for cucumber to fit.
  • Place the cucumbers in the container with the marinade.
  • Place on the lid and give it a good shake to coat the cucumbers.
  • You can eat straight away, but the longer they are left to marinade, the better they will be.

Notes

  • Gochujang is available in most major supermarkets.
  • Gochugaru is available in most oriental supermarkets. If you can not get this, replace with 1/2 tsp of dried chilli flakes
  • Keep in the fridge for up to 5 days.
