Thai beef with holy basil lettuce cups

This is one of my favourite recipes for a light lunch when I am watching my weight!

Absolutely delicious and low in fat, can it get any better!

Ingredients

  • 500g Beef mince (5% fat)

  • 7 Garlic cloves (chopped)

  • 1 Onion (sliced)

  • 3tsp Light soy sauce

  • 1.5tsp Dark soy sauce

  • 1.5tsp Oyster sauce

  • 1.5tbps Fish sauce

  • 0.5tsp Sweetener

  • 60g Thai basil

  • 4 Thai chillies (finely chopped)

  • 4 Little gem lettuce

  • Corriander (to garnish)

Directions

  • Heat wok over a high heat and spray liberally with low fat cooking spray
  • Sear beef until just browned and set aside
  • Add garlic and stir fry for 15 seconds and then add the onions and chilli
  • Cook onions until slightly browned
  • Add beef back in along with the soy sauce , oyster sauce, fish sauce and sweetener and mix well
  • Add the thai basil and stir until the basil has wilted
  • Remove the leaves from the lettuce and arrange on a plate
  • Add a spoon of the beef onto each leaf and then sprinkle on some corriander
