This is one of my favourite recipes for a light lunch when I am watching my weight!
Absolutely delicious and low in fat, can it get any better!
Thai beef with holy basil lettuce cups

500g Beef mince (5% fat)
7 Garlic cloves (chopped)
1 Onion (sliced)
3tsp Light soy sauce
1.5tsp Dark soy sauce
1.5tsp Oyster sauce
1.5tbps Fish sauce
0.5tsp Sweetener
60g Thai basil
4 Thai chillies (finely chopped)
4 Little gem lettuce
Corriander (to garnish)
Directions
- Heat wok over a high heat and spray liberally with low fat cooking spray
- Sear beef until just browned and set aside
- Add garlic and stir fry for 15 seconds and then add the onions and chilli
- Cook onions until slightly browned
- Add beef back in along with the soy sauce , oyster sauce, fish sauce and sweetener and mix well
- Add the thai basil and stir until the basil has wilted
- Remove the leaves from the lettuce and arrange on a plate
- Add a spoon of the beef onto each leaf and then sprinkle on some corriander
