Quick, simple and delicious. You will never use store bought again!

Ingredients

  • 2 Egg yolks

  • 1tsp Dijon mustard

  • 1tsp White wine vinegar

  • 250ml Neutral Oil (Groundnut, Rapeseed, Grapeseed etc)

  • Salt and pepper

Directions

  • Place egg yolks, white wine vinegar and mustard in food processor
  • Using the lowest speed, blend together
  • With the machine still running, trickle in the oil in a steady slow stream until the mayonnaise is thick and emulsified
  • Add lemon juice and blend briefly
  • Add seasoning to taste, blending briefly to incorporate
